Javier Toledo is currently Head Sommelier of Viña del Mar and La Castellana Cancún, leading company in the distribution of wines in Quintana Roo.

Before becoming a sommelier he considers himself passionate about wine, gastronomic experiences and good living, he presents himself before the wine, in the gastronomy race and this involves him in this world, where he had the fortune to proudly represent Casa Madero, the oldest winery in the American continent, in the Yucatan Peninsula.

Active and certified member of the Association of Mexican Sommeliers AC and the WSET (Confidence in the Education of Spirits Wines) Award in Wines Level 1, member of the team of instructors of the diploma of wines and the diploma in distilled beverages and infusions for training of sommeliers chapter Peninsula of the same association, being participant of the contest for Jr. Sommeliers of the association 2016 obtained the 2nd place at regional level, towards the final of the best Jr. Sommelier of Mexico.

In his career in wine he has had the opportunity to take viticulture and production courses directly in the field under the guidance of Francisco Rodríguez (Enologist) and Daniel Muñoz (Agronomist), as well as in the vineyards of the Priory and Santa Sadurnia de Anoia in Catalonia, Spain; This, coupled with the training courses, have generated bases to train the service staff in most of the consumption centers of Quintana Roo, managing to intensify the culture and the correct consumption of wine in the area.
