His passion for gourmet cuisine made him travel to London in search of his dream leaving his country, Guatemala. In London he worked for four years at the Savoy Hotel, completing his culinary arts degree at Thames Valley University.

Juan Diego had the opportunity to travel to Hong Kong and managed to do an internship at the Shangri-La Hotel and also for the Petrus French Restaurant.

In 2009 he arrived to Playa del Carmen to realize his dream of opening a restaurant where he could develop and create his own dishes by opening the Cocina 38 Restaurant.

The opportunities were presented, inaugurating Imprevist in 2011 and because of the success of this, he decided to venture to the opening of Plank in 2013, which in 2016 gets the 5 Star Diamond Award.
