Born in Mexico City, Cesar decided at 12 years old to dedicate his life to gastronomy.
He strived to acquire and master techniques, learning from some of the best Chefs in Mexico, and applying them to the richness of Mexican ingredients and flavors. Cesar is passionate about his profession and enjoys every part of his life in the kitchen. This work ethics was first transmitted by critically acclaimed Chef Martha Ortiz (Aguila y Sol and Dulce Patria) and then by Mexico Top Chef finalist Matteo Salas (Oca, Aperi, Jacinto 1930) with whom Cesar maintains a strong friendship and professional bond.
After being the Executive Chef of Condesa DF, Cesar along with his team of young talented chefs decided to move to Tulum to open NÜ where they express their vision of Mexican gastronomy. Elected in April one of Mexico’s 10 best Chefs under 30 by Gourmet Magazine, Cesar commented “I want to constantly reinvent myself and want to be surprised, in Tulum I found a home where everything flows naturally and organically. I feel blessed to be able to share our version of the modern Mexican Cuisine”.
