Carlos Zamora Larios is a privileged talent who graduated from “Centro Culinario Ambrosia”, one of the best gastronomy academies in México.

After his professional practices and acquire the necessary skills, Carlos was ready to take a big step and join the team of “Moxi by Enrique Olvera”, a restaurant in San Miguel de Allende, Mexico.

Nowadays he works as a Head Chef at Viceroy Riviera Maya Hotel where he offers original interpretations of Mexican classics using an interesting mix of local flavors; and where inspiration comes from the richest Mexican tradition of markets, street stalls and those home-cooked meals that taste like tradition, he also adds styles and techniques that are collected from a tour around some important cuisines of destinations such as Cancun, Puerto Vallarta , Barcelona, Los Cabos and Veracruz.
